Southern Comfort Cake
***NOTE: I have modified this recipe slightly since the last time I posted it.
18-1/2 oz. yellow cake mix
3-1/4 oz. package instant vanilla pudding mix
1/2 cup Southern Comfort
4 eggs
1/2 cup cold water
1/2 cup oil
1 cup chopped pecans or walnuts
Glaze:
4 T. Butter
1/8 cup water
1/2 cup granulated sugar
1/4 cup Southern Comfort
Combine cake ingredients in a large bowl and beat at a medium speed for 2 minutes. Pour into a greased and floured 10-inch tube or 12-cup bundt pan. Bake at 325ºF for 1 hour. Cool on rack. Invert on serving plate; prick top repeatedly with toothpick and brush with glaze coating well.
IF YOU WANT TO....after cake has cooled, reheat any left over glaze and brush over cake. Sift 1 t. of powdered sugar over cake just before serving (OPTIONAL).
To make glaze, melt butter in saucepan. Stir in water and sugar. Boil 3 minutes, stirring constantly. Remove from heat and stir in Southern Comfort.

I just made it today--it is awesome!! I'm normally a "from scratch" baker so I am extremely excited to have such a quick to make, but dynamite to eat cake in my repertoire.

The guy at the liquor store was telling me not to burn down the house with the Southern Comfort. You don't know me, MAN! This is my 4th or 5th time using your recipe for this cake. I think I should make two instead of one because I have a feeling that my fam is going to tear it up!

As soon as the Turkey is set in it's brining mixture I'm heading out to the likka sto for some southern comfort. It's a must at all family gatherings now.

Thanks for all your recipes, Monica. I'm cooking for Thanksgiving this year and I have a few of your recipes on my menu. This cake is definitely one of them.
Also, my coworkers LOVED your Jambalaya recipe. I had enough for two pans. The first pan was gone by the end of the party and the second was gone the next day when everyone slammed the leftovers. Thanks again!
