I just wanted you to know that I made some gumbo last Saturday according to your recipe. Lemme tell ya...Baaaaaaby (said like you say it) - If I knew where you lived I would come and smack you down. That gumbo was soooooooooooo good!!!! When I told my kids I was making it - you know, trying to act like I knew what I was doing and all - my 15yr old said, "you gonna start out with a roux because that's time consuming." I gave him the side-eye because really, what should he know about some roux. But I followed your recipe to the "T" right down to the Tony's Creole Seasoning and Oh-Em-Geee, the pot was empty by Sunday afternoon. My nephew asked could I make it again this week. Had my chest all puffed out :-)
