Sorry for the sucky pic but I took it with my phone in a hurry.
This meal was quick and DEEEEEEEEEEEElicious!
- Parmesan cheese
- Salt and pepper
Preheat oven to 400 degrees.
Oil two baking sheets.
One one...place the salmon. Drizzle with oil and lemon juice.
On the other one...break up enough cauliflower and sprinkle with grated parmesan cheese.
Put in oven for 15 minutes.
While cooking...dice up one tomato and one tablespoon of capers per two salmon fillets.
Season with basil, salt and pepper.
Serve salmon with tomato salsa on top.
The roasted cauliflower was so good I'm mad I didn't make more. Ugh!
