Enough wild caught rockfish for all
Enough organic spinach for all
Enough large shrimps for all
1 cucumber, two tomatoes, 1 half red onion per two people
1 lemon
Turn oven on to 375 degrees. Put about an inch of olive oil in a shallow dish. Season olive oil with fresh garlic, black pepper, salt and lemon pepper. Add shrimp.
Rinse rockfish and pat dry. Put in on a baking sheet on top of aluminum foil (I turn up the edges of the foil.) Rub lightly with olive oil and season with black pepper.
Put shrimp and rockfish in oven. Set timer for 15 minutes.
Cut up cucumbers, tomatoe and red onion and drizzle with olive oil and vinegar. Season with a bit of salt and pepper.
Take shrimp out after 12 minutes (if you have a gas oven like I do...put shrimp on lower rack since it's not covered...I learned this the hard way once. LOL!) and remove from oil. These are your appetizers. Place on dish for grazing.
Put a huge handful of spinach per person in a microwaveable dish. Drizzle lightly with olive oil and season with black pepper and a bit of salt. Cover with press and seal wrap venting a corner. Microwave for two minutes.
Remove fish from oven and immediately squeeze half a fresh lemon over it.
Serve hot.
