When you have something going on and a major cooking endeavor in front of you...your absolute best friend are ziploc bags.
Prep work is the messiest part of cooking ya see. There's always scraps of something all over the place and it's really easy to lose sight of just how big the mess is. So yeah...taking some time the day before to cut up everything you're going to need and measure the amounts into ziploc bags. Put those puppies in the fridge and VOILA! Less mess the next day when you're getting your cooking on!
I have a lot to do today because I apparently really hate myself for always doing everything in a manner by which I always have a hectic azz pace but thank goodness the prep work is done for my REAL gumbo and the kitchen is clean. Gumbo cooking is going to be a breeze for me.
